The Vollrath/Idea-Medaille 21473-1 Thermostat has a 3/16 x 11-1/2 inch bulb with a 24 inch capillary tube that measures temperature by detecting the change in heat with the bulb. The internal mechanism reacts to the changes in temperature by opening or closing the circuit to keep the set point. It is fitted in a commercial cooking or warming system where temperature is needed. The long capillary enables flexible place of the sensing area and control housing between the heat zones and the control panel of the equipment layout.
